The Macallan recently released its 6th expression (2022 release) in the Classic Cut series. The Macallan Classic Cut single malts are bottled at higher ABV than it's standard 43% ABV bottlings, but they are not cask strength. Cask strength whiskies are whiskies that have not been substantially diluted with water at bottling. What gives whisky its flavour?

A whisky develops its aroma and flavor mainly through its contact with the wood during maturation. The vast majority of Scotch whiskies are matured in ex-bourbon American white oak casks (i.e., casks previously used for maturing bourbon whiskey), which imparts honey, vanilla, cereal and sugary note. Whiskies matured in ex-bourbon casks tend to be golden in color. Another more popular oak casks used for whisky maturation are oak casks that previously held Sherry wine, a Spanish fortified wine made from white grapes. Licensed in 1828, Springbank is one of the last surviving producers of single malt whiskies in Campbelltown, an area that once had over 30 active distilleries. It is the only Scottish distillery to perform 100% of the whisky making process on-site – from malting the barley to bottling the spirit and even printing the label. Collectible Whisky - Bruichladdich Rare Cask Series

The Bruichladdich is one of nine working distilleries on Islay. Founded in 1881 by the Harvey brothers it was a “state-of-the-art” distillery with uniquely tall and narrow-necked were chosen to produce a very pure and original spirit. The distillery was closed in 1994 before being re-opened in 2001 under new ownership, who retained most of the original Harvey machinery that is still in use today.
